Some people, like myself insist op making there own curry paste, for me its just a sense of achievment and joy of experimentation. That being said here is a Thai Red curry Paste recipe to get you started.
Ingredients
- Tablespoon of Trasi / Dried Shrimp Paste
- 6 Dried Chillies soaked or substitute fresh Red Chilli
- 2 Cloves of Garlic
- 6 Shallots or substitute 2 small Onions
- 2 Kaffir Lime Leaves
- 4 Stalks of Lemon Grass
- 1 Corriander (root and stem section)
- 5cm of Galangal
Instructions
Dry fry the Trasi until pungent, add chilli, garlic and shallots and fry until onion is golden. Remove from wok and place into a blender or mortar and pestle with the remaining ingredients and blend until it forms a smooth paste. Place blended ingredients back into the wok and fry gently adding a little oil if required.Makes enough Curry paste for approximately 1kg of ingredients of your choice in a curry.
