Pepper Chicken is an Indian stir fry with distinctive curry flavors. It is a great example of fusion cooking and is delicious and lighter than a traditional Indian Curry.
Ingredients
- 1 Chicken (chopped into bite size pieces)
- 1/4 of a cup of Oil
- 2-4 dry chillies
- 1 tablespoon of bruised fennel seeds
- 2 teaspoons of black mustard seeds
- 2-3 finely diced onions
- 2 tomatoes or equivalent crushed tinned tomatoes
- 8 cloves of garlic
- 1 inch of young ginger
- salt to taste
- 1 teaspoon of cumin
- 1 teaspoon of turmeric
- 2 tablespoons of coarsely crushed black peppercorns
Instructions
Heat Oil in a wok and fry mustard seeds, fennel and chillies until fragrant. Add onion and fry until soft and slightly browned, add tomatoes and cook until soft.Add chicken and remaining ingredients, frying until sauce reduces to a thick coating on the chicken. Serve with Rice.
